fried quinoa cakes
Beat eggs and mix in all ingredients except the cooked quinoa. Fold in quinoa. Form into 4 patties, chill in fridge for at least 20 min (or freezer if you don't have 20 min) then fry. Chilling the patties helps keep them together when frying. I do the same thing with crab cakes, homemade veggie burgers, etc. Fry for 2-4 minutes per side (depending on thickness and how long they were chilled) on medium high heat should give you a nice golden brown crust.
These go really well with braised meat. Pour some of the braising liquid over the crunchy cake before serving. Holds up well and shouldn't get soggy.
Optional Ingredients - corn, diced asparagus, sun dried tomatoes, capers, crab, parsley, cilantro, etc.
